Below are descriptions of charts at the bottom of the page to compare restaurant ranking guides. As stated before, I have limited the geographic scope of this website to France- the birthplace and home of the world's best fine dining and the United States, where most website readers of the reside.
France & Switzerland - Top Rated Restaurants 2022
The chart includes all Michelin 3-stars and Gault&Millau 19's and higher, as well as Andy Haler's more current ratings. You can immediately see the multitude of quality levels between the guides scores to see an average quickly. This should give you a more accurate picture of each restaurant's probable overall quality level, making the choice of where to dine much easier. The WorldsTop50 is included if only to see the extreme difference to others. They do not seem to agree on anything with the other guides for the ratings of the top restaurants in the world.
United States - Top Rated Restaurants Chart 2022
All Gayot 19's and Michelin 3-star restaurants are included. Note that Daniel and Jean-Georges, who had 3-stars, now have a 2-star rating, as do 35 other restaurants. Many of these 2 stars are unknown to most people and are not anywhere near the level of these two great chefs, creating a huge disparity. Also notice that the 13 Michelin 3-stars are rated 16 to 19 by Gayot- quite a divergence. Forbes seems to agree, also giving them 5 stars. The 3-star system or requirements for each star would be much better if it was revamped, especially for the United States guide. I am sure Michelin has thought about it and dismissed the idea of adding two categories. I would suggest delineating the best of the best 3-stars, like a designation of ***+ or 3.5 stars. Then another for the considerably wide gap between 2 and 3-stars with **+ or 2.5 stars. The guide would be much better to use and would correct almost all the issues mentioned above. One might conclude that Michelin has considered this, but changing a 90-year tradition of having the simplicity of only 3-stars is not wanted at this time.
Forbes
It has all 4 and 5 stars except 2 that are 'unrated'. It most closely follows the Michelin guide agreeing on 16 of 18 3-stars. If you prefer to use Michelin ratings to Gayot, this guide would be the most suitable for markets other than the five that Michelin covers in the United States.
Skip's Fine Dining List 2022
To break down where I will dine on my next trip using a spreadsheet, I list all the restaurants and their ratings. Then also adding my rating of 1 to 3 to keep it simple for decor, food/menu, and location. Some might appreciate this 'over the top' selection process with this approach and succinctness. Several insights quickly come into view, especially when sorting by minimum price, decor, and location ratings.
This chart is included in my book 'A Guidebook To The World's Best Fine Dining Restaurants'
A standout on the chart is that all California Michelin 3-stars want you to spend $350 per person plus wine, cocktails, and tip, which is the same or more than higher-rated New York restaurants. Most of the best restaurants in France offer à la carte menus with no minimum. The cost to do business is much higher in New York, but many California restaurants are more remote and do not get the same volume level, which may contribute to this. At $350++ per person, many do not inform you how many courses you will receive to know better how long dinner might take without calling them. Some have no menu's on their website, so I generally refuse to support or dine at these restaurants. I find it lazy, arrogant, and thoughtless. It is like considering buying tickets for an opera or a symphony but not being told which opera or what the music will be before buying the tickets. Every customer has different tastes, and most would like to know the ingredients and preparations a particular chef might use. Having said that, almost all restaurants will go out of their way to accommodate change requests. At these very steep prices and no control over the length of time, I am required to sit, I would rather go to New York City or France and have more options and a generally higher level of '3-star' cuisine except for The French Laundry.
